Ingredients: 4 lbs. tomatoes 5 large garlic cloves 10 large basil leaves 1/2 t red pepper flakes 1/8 medium onion, cut in fourths 1/2 T balsamic vinegar 1/2 t garlic powder salt to taste (I use 1/2 t) pepper to taste (I use 6 grinds)
Directions: 1. Cut tomatoes in large chunks and remove tough stem part. 2. Place 1/3 tomatoes in food processor fitted with standard blade, and process until smooth. Pour into stock pot and repeat with next 1/3 tomatoes. 3. Add the last 1/3 tomatoes, garlic, basil, red pepper flakes, onion, balsamic, garlic powder, salt, and pepper to processor and process until smooth. Add to pot. 4. Cover and heat on med-high until simmering. Remove cover, turn down to medium and simmer for 35-45 minutes, stirring occasionally.
Notes: * In the Summer, I use tomatoes from my garden. When I don’t have garden-fresh tomatoes, I usually buy romas or vine-ripe for this sauce. * This will make enough sauce for about 6 12" pizzas.
