Spring Preview

After days and days of rain and cold, it was an unseasonably warm 70 degrees. I stepped outside to take in some much-needed sunlight and warmth and was greeted by my King Alfred daffodils blooming with abandon. Daffodils blooming in February signal that while not here yet, spring is coming.
This little spring preview reminded me that there may be more cold days, but sunshine and warmth are just on the other side. It lightened my heart and was just the thing to point out that underneath the muddy bare soil there is life growing, those periods of quiet, rest, and calm, are just what is required for the spring that will come, and that the waiting is part of the growing and preparing not just a placeholder until the blooming begins. Next time you're waiting for your own spring, I hope you find a little preview to sustain you.

Here's a "spring preview" recipe for you while you wait out these last days of winter. This meal is just warm and comforting enough for a cold winter day but has light, fresh flavors to remind you of sunny days to come.
