Used as a side or a topping for tacos, this salad filled with mangoes and fresh veggies will have you coming back for seconds!
Serves: 2 as a side or enough topping for about 6 tacos
Ingredients: 1/2 C cilantro leaves 2 in. X 1 in. wedge red onion, cut in two pieces 2 garlic cloves 2 Champagne Mangoes 1 C spinach, stems removed and sliced thin 1/2 C diced poblano pepper 2 t freshly squeezed lime juice 1/2 t paprika 1/2 t chili powder 1/8 t garlic powder salt to taste (I use 1/2 t) pepper to taste (I use 12 grinds) Directions: 1. Place cilantro, red onion, and garlic cloves in a mini food processor. Process until minced (can also use a regular food processor or finely dice by hand). Add these ingredients to a medium sized mixing bowl. 2. Add all remaining ingredients to the mixing bowl and toss with spoons to evenly blend.
Notes: *This make a delicious side. It's also used as a topping in Grilled Chicken Tacos with Mango Chili Spinach Salad *Adding grilled chicken to this salad turns it into a quick, healthy meal. *Regular mangoes can be used in place of champagne mangoes. You may need to reduce to 1 or 1 1/2 mangoes depending on size.
