Ribbon Vegetable Salad with Chili-Sesame Dressing
Made with fresh, raw vegetables thinly shaved and tossed in a sesame-chili dressing, this side is quick, delicious, and healthy.
Servings: 2-4
Ingredients:
Dressing: 2 T rice wine vinegar 2 T sweet red chili sauce 1/2 T toasted sesame oil 1/4 t garlic powder salt to taste (I use 1/4 t) pepper to taste (I use 4 grinds)
Vegetables: 1 medium zucchini 1 medium yellow squash 1 small red bell pepper 2 carrots 2 green onions
Toppings: 2 t toasted sesame seeds 1/4 c chopped peanuts
Directions: 1. Make the dressing by adding all dressing ingredients into a large mixing bowl. Whisk to blend well. 2. Cut all the vegetables except the green onions in half length-wise. Create ribbons by shaving with a vegetable peeler into thin slices. Add shaved vegetables to the bowl on top of the dressing. 3. Thinly slice green onions at a slight diagonal. Add these to the bowl. 4. Add Sesame seeds, and peanuts to the bowl. 5. Toss until the vegetables are evenly coated with the dressing. Serve immediately.
