Ingredients: 2 Lbs. Sweet Potatoes, peeled and diced into 1/2" chunks 1 t garlic powder 1/4 t cayenne pepper salt to taste (I use 1 t) pepper to taste (I use 10 grinds) 2 T olive oil finely chopped cilantro for topping/garnish
Directions: 1. Preheat oven to 425 degrees. 2. Place chopped sweet potatoes on baking tray with sides. 3. add all remaining ingredients to sweet potatoes and toss with spoons until evenly coated. 4. Spread out into single layer. 5. Bake until staring to brown, about 10-12 minutes. Remove from oven, toss potatoes, and again spread into single layer. Place back in oven until crisp, about 8 minutes. 6. Top with cilantro for garnish.
