Makes enough dressing for 4-6 small salads, about 1/2 C dressing
Ingredients: 1/4 C pinot grigio vinegar 1 medium garlic clove, mined salt to taste, (I use 1/8 t) pepper to taste, (I use 8 grinds) 1 t Dijon mustard 1/2 T mayo 1/8 t garlic powder 2 T truffle oil 2 T olive oil 1/2 t honey
Directions: 1. Add all ingredients to small mixing bowl and whisk until emulsified.
Notes: * I like Lucini pinot grigio vinegar. If you are unable to find, you can substitute white wine vinegar or champagne vinegar. * this pairs well with a simple salad of greens, pine nuts, and Parmesan.
